Lemon Herb Chicken Thighs

  • 8 chicken thighs (we used bone-in)
  • 2 tbsp fresh thyme leaves
  • 1/4 cup olive oil
  • Salt and pepper
  • Juice and zest of 2 lemons
  • Lemon slices & fresh herbs for garnish
  • 4 garlic cloves, minced
 
  • 2 tbsp fresh rosemary, chopped
 

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice/zest, garlic, rosemary, thyme, salt, and pepper.
  2. Pour marinade over chicken thighs in a zip-top bag or shallow dish. Refrigerate for 1–4 hours.
  3. Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6–8 minutes per side or until internal temp reaches 165°F.
  4. Rest 5 minutes before serving. Garnish with lemon slices and herbs if desired.
