Lemon Shortbread Heart Cookies

Lemon Shortbread Heart Cookie Recipe

Ingredients:

Cookie Dough:
  • 1/2 cup confectioners' sugar
  • 1 cup butter, softened
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon grated lemon zest
Glaze:
  • 2 cups confectioners' sugar
  • 2 teaspoons grated lemon zest
  • 3 tablespoons lemon juice
  • Colored sugar

Directions:
  1. Beat butter, sugars and salt until blended; beat in lemon zest. Gradually beat in flour. Divide dough in half. Shape each into a disk; wrap. Refrigerate 30 minutes. Let dough stand at room temperature 5-10 minutes to soften slightly.
  2. Preheat oven to 325°. Roll each portion of dough between two pieces of waxed paper to 1/4-in. thickness. Cut dough with a floured 1-1/2-in. heart-shaped or other cookie cutter. Place 1 in. apart on lightly greased baking sheets.
  3. Bake until bottoms are lightly browned, 7-10 minutes. Remove to wire racks to cool completely.
  4. For glaze, mix confectioners' sugar, lemon peel and lemon juice until smooth; spread over cookies. Sprinkle with colored sugar.
 

Chicken Marsala

Chicken Marsala Recipe

Ingredients:
  • 4 boneless, skinless chicken breasts, 6 ounces each
  • 3 tablespoons flour
  • 1 10-ounce package sliced cremini mushrooms
  • 1 large shallot
  • 1 clove garlic
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup marsala wine
 

Directions:
  1. Using the flat-side of a meat mallet or bottom of a heavy saucepan, pound the chicken breasts to 1/2 inch thick. Season with 1/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Lightly coat the chicken breasts with flour. Heat 1 tablespoon olive oil in a large skillet on medium and cook chicken until golden brown, 4 to 5 minutes per side; transfer to a plate.
  2. While the chicken is cooking, finely chop the shallot and garlic.
  3. Add 1 tablespoon olive oil to same skillet. Cook the sliced cremini mushrooms on medium-high, tossing occasionally, until golden brown, 5 minutes. Add the chopped shallot and garlic. Season with 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper; cook 2 minutes.
  4. Add the low-sodium chicken broth and marsala wine to the skillet along with the browned chicken and its juices and simmer until the liquid is reduced by half, 4 minutes. Sprinkle with chopped parsley. Serve with sautéed spinach.


Cheddar-Beer Fondue

Ingredients:
  • 12 oz. light beer
  • 1/2 teaspoons Dijon mustard
  • 1 clove garlic
  • 1/4 teaspoons
  • Hot sauce
  • 4 cups shredded sharp Cheddar cheese
  • 2 tablespoons cornstarch
  • Cooked sausage
  • New potatoes
  • Bread cubes
  • Apple slices
 
 
Directions:
  1. Heat beer, Dijon mustard, garlic, and hot sauce in 4-quart saucepan on low; whisk in Cheddar cheese tossed with cornstarch until melted and smooth.
  2. Serve with sliced cooked sausage, cooked new potatoes, bread cubes, and apple slices for dipping.

Ingredients:
  • 4 teaspoons mayonnaise
  • 2 slice white sandwich bread
  • 1 tablespoons butter
  • 2 large eggs
  • Salt
  • Pepper
  • Finely chopped capers
  • Finely chopped fresh herbs
 
Directions:

 
  1. Spread mayonnaise on both sides of 2 slices white sandwich bread. With medium heart-shaped cookie cutter, cut centers from bread. In 12-inch nonstick skillet, melt butter on medium. Add bread (and centers) to skillet. Cook 5 minutes or until golden brown. Turn bread over. To each heart-shaped hole, add 1 large egg; sprinkle eggs with pinch of salt and pepper. Reduce heat to medium-low. Cook 5 to 7 minutes, or until whites are set. Sprinkle with finely chopped capers and herbs (such as parsley, chives or basil) if desired.
