Slow Cooker Salsa Chicken Recipe

Ingredients:

  • 2 1/4 cups water
  • 1 cup quinoa
  • 4 ounces cream cheese, reduced fat
  • 2 red bell peppers, roughly chopped
  • 1 lb. chicken breasts (halved if they’re big)
  • 1 jar salsa (16 ounces)

 

Directions:

  1. Pour water into slow cooker
  2. Add quinoa
  3. Dollop cream cheese around the crock pot, about 4-5 dollops
  4. Add chopped bell peppers
  5. Add chicken
  6. Pour salsa over chicken
  7. Set slow cooker to low
  8. Cook on low for 8 hours
  9. Serve and enjoy!
